These deviled egg eyes can be a little more time consuming than most of our spooky halloween snacks, but they definitely bring in the creep factor. For me however, being in a time crunch and doing this with three kids, we cut off ⅔’s of the prep time by using already boiled eggs (thanks Costco). It saved the boiling, shocking, and peeling the eggs turning a 25 minute prep into a 0 minute one. If you do need to boil the eggs, I added the Food Network method for hard boiled eggs. It usually works great for me when it comes to not peeling half the egg with the shell…If I’m paying attention to the timing of it all anyway.
Anyway, regardless of if you do it by scratch or if you use the already hard boiled Costco eggs, these “eyes” are delicious, super fun to make, and gross to look at. The perfect Halloween snack.
Ingredients:
- Hard boiled eggs
- Mayonaise
- Vinegar
- Yellow mustard
- Salt and pepper
- Spanish olives with pimento
- Red food coloring
Let’s do this:
- Place eggs in a single layer in a saucepan and cover with enough water that there’s 1 ½ inches of water above the eggs. Heat on high until water begins to boil, then cover, turn the heat to low, and cook for 1 minute. Remove from heat and leave covered for 14 minutes, then rinse under cold water continuously for 1 minute.
- Crack egg shells and carefully peel under cool running water. Gently dry with paper towels. Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, vinegar, mustard, salt, and pepper, and a couple drops of red food coloring. Mix well.
- Evenly disperse heaping teaspoons of the red yolk mixture into the egg whites.
- Cut olives in half and add one half to each “eye”. ENJOY!!

Ingredients

- 1 teaspoon white vinegar
- 1 teaspoon yellow mustard
- ⅛ teaspoon salt

- 6 Spanish olives with pimento cut in half
