Not just your average ham and cheese, this high-brow Parisian delicacy has toasted cheese both on the inside and outside and is topped with Bechamel sauce. While normally made with white sandwich bread, to kick it up a notch, use croissants.

Ingredients
Bechamel Sauce
- 1 tablespoon butter
- 2 tablespoon all-purpose flour
- 1 cup milk
- ½ teaspoon salt and pepper to taste
- pinch nutmeg
Sandwich
- 2½ cup Gruyere cheese, grated
- ¼ cup Parmesan, grated
- 8 slices white bread or 4 croissants
- 1 teaspoon dijon mustard per sandwich
- 1 pieces of ham per sandwich
Instructions
- *If using store bought béchamel sauce, skip instructions 1-3 and cook the sauce according to instructions. Once warm, add in the ½ cup Gruyere and ⅓ cup Parmesan.*
- Kidtastic!: Heat the milk in microwave or saucepan to get warm.
- Team Effort: In another saucepan, melt the butter over low heat. Add the flour and stir together for 2 minutes. Slowly pour the hot milk over the flour and butter mixture and whisk continuously for several minutes, until the sauce is thickened. This is called béchamel sauce and will go over the tops of the sandwich.
- Kidtastic! Remove from heat and stir in the salt, pepper, nutmeg, ½ cup grated gruyere, and ⅓ cup parmesan.
- Parent Duty: Places slices of bread or croissants on cookie sheet and toast in oven for 3-5 minutes on each side.
- Kidtastic!: If your kids want to try it, have them put a light spread of dijon mustard on one side of the bread, add 1-2 slices of ham to each, and sprinkle with gruyere. Top with another slice of toasted bread.
- Kidtastic!: With a spoon, spread the tops of the sandwiches with the bechamel sauce, sprinkle with more gruyere. Parent Duty: Bake for 5 minutes. Then broil for 3-5 minutes, It can burn very easily with the broiler so keep an eye on it.
