Greek Lemon Chicken Soup (Avgolemono)

Ingredients

  • 2 cup shredded chicken
  • 1 cup cooked rice
  • ½ tablespoon dill (dry will also work)
  • 4 cup chicken stock or broth
  • ¼ cup fresh lemon juice
  • 2 egg yolks
  • salt and pepper to taste

Instructions

  • Kidtstic! Shred 2 cups rotisserie chicken.
  • Kidtastic! Add chicken, dill, chicken stock, salt, and pepper to a large pot. Cook for 15 minutes until warm.
  • Kidtastic! Mix egg yokes and lemon in a small bowl. Add to soup mixture. Make sure mixture is just warm and not hot, otherwise the yokes will break.
  • Kidtastic! Stir mixture consistently. Add cooked rice and allow soup to arrive at serving temperature.
  • Serve immediately
  • **It is just as easy to use uncooked rice. Use ½ cup and pour rice in with just the chicken stock in the beginning. Cook for about 15 minutes on high or until rice is just underdone. Follow the rest of the instructions as noted.**
