Team Task: Gradually stir in the milk whisking constantly until the sauce has thickened.
Kidtastic!: Add Dijon, cubed ham, salt, pepper, and nutmeg.
Kidtastic! Pour the mixture onto a baking sheet and spread evenly. It should be the consistency of soft play dough. Cover with plastic wrap and refrigerate until cold.
Kidtastic!: While mixture is cooling, place 1 cup flour, 2 beaten eggs, and breadcrumbs in separate bowls.
Team Task: When mixture is ready, it should roll into balls fairly easily. Roll 1inch balls of mixture. Cover with flour, then egg, and finally breadcrumbs.
Parent Task: Add oil to a large frying pan. Heat over medium-high or 360 degrees.
Parent Task: Add the croquettes one at a time. Give each one room enough to swim without hitting any other. Cook for two minutes per side or a nice golden brown. Remove and drain on paper. Serve immediately.
Notes
To make a vegetarian version, skip the ham and add whatever kind of cheese you like.
